The removal of the grapes from the stalks of each bunch is done manually and patiently with only the ripest grapes being selected. This delicate operation of the grape harvest only takes place at the ideal moment which only the most experienced amongst us can recognise and this is when the Mencía shows us all its magic. The moment of the grape harvest is always a very special moment when the grapes show that they are ready to give us all their flavour and strength. The Mencía grape is the base for making true Amandi wine, its heart and its soul. After the harvest comes the magic of the fermentation which takes place completely naturally. This allows the Mencía to maintain its colour and the wine to conserve its authentic aroma and taste. Heroic ViticultureLots of sun, moderate rains, granite soils and the sea breezes that come and protect the vines in the summer. The grapes benefit and give back generously. A vineyard with slopes of 60% to 75%. An altitude of between 200 and 500 metres. The secret of this wine is found in the vines of Marcelino I. that are cultivated in only 7 hectares by men who are passionate about their land and the riches that the soil offers.
